TO MAKE SOURDOUGH STARTER:


STEP 0: AT LEAST ONE WEEK PRIOR, IN CLEAN QUART SIZED MASON JAR,

- MIX 1C FLOUR AND WATER TO VERY THICK PANCAKE BATTER CONSISTENCY AND LET SIT OVER NIGHT SOMEPLACE LIKE, LIKE ON TOP OF REFRIGERATOR.

- FEED STARTER DAILY BY REMOVING HALF OF STARTER AND ADDING 1/2C FLOUR AND SUFFICIENT WATER TO RETURN IT TO VERY THICK PANCAKE BATTER CONSISTENCY.


TO MAKE BREAD:

STEP 1: 4- 7 HOURS PRIOR, FEED SOURDOUGH STARTER

- BY REMOVE HALF OF STARTER

- AND ADD 1C FLOUR

-THEN ADD WATER TO VERY THICK PANCAKE BATTER CONSISTENCY


STEP 2: 45 MIN PRIOR, COMBINE FLOUR & WATER , MIX JUST UNTIL COMBINED, DON'T OVER MIX, COVER AND LET SIT

- 3 1/4C FLOUR

- 1 1/2C WATER


STEP 3: ADD 1C OF STARTER TO FLOUR AND WATER, 2 TSP SALT, MIX BY STRETCHING ONE SIDE AND FOLDING ACROSS AND PUSHING DOWN GENTLY, WITHOUT KNEADING. REPEAT 10 TIMES.


STEP 4: REPEAT STEP 3 EVERY 30 MINUTES, FOUR TIMES.


STEP 5: COVER DOUGH, LET SIT FOR 4-7 HOURS AT ROOM TEMP, OR OVERNIGHT IN REFRIGERATOR.


STEP 6: PLACE DOUGH ONTO LIGHTLY FLOURED SURFACE AND SHAPE INTO A ROUGH BALL. LET REST COVERED FOR 30 MIN.


STEP 7: GENTLY SHAPE INTO A LOAF SHAPE, FOLD OUTTER EDFGES OF DOUGH INTO ITS CENTER, CREATING A STRETCHED TENSION ON THE SURFACE OF THE TOP OF THE DOUGH LOAF. PLACE INTO A ROUND BOWL, TOP DOWN, SUFFICIENT TO HOLD DOUGH AND ALLOW IT TO RISE, LINED WITH A HEAVILY FLOURED DISH TOWEL, COVER AND LET SIT 2-4 HOURS AT ROOM TEMP OR OVERNIGHT IN THE REFRIGERATOR.


STEP 8: PREHEAT OVEN AND CAST IRON PAN TO 500F. FLIP THE DOUGH OUT FROM THE BOWL ONTO A SHEET OF PARCHMENT PAPER, REMOVING THE DISH TOWEL, BRUSHING OFF EXCESS FLOUR, AND SCORING THE TOP, THEN PLACING INTO PREHEATED CAST IRON PAN, ON TOP SHELF OF OVEN, AND ON LOWER SHELP PLACE A SHEET PAN, LINED WITH ALUMINUM FOIL AND FILLED WITH A LIGHT LAYER OF ICE. BAKE 20 MIN, THEN REDUCE TO 450F AND BAKE ANOTHER 20 MIN. THEN TURN OFF OVEN, OPEN OVEN DOOR SLIGHTLY AND LET SIT ANOTHER 10 MIN, THEN REMOVE FROM CAST IRON PAN AND COOL ON A RACK ONE HOUR BEFORE SERVING.
